3、性能：無色無味的結晶體，在空氣中可被風化，可燃。易溶于水，微溶于乙醇，不溶于乙醚。123℃時失去結晶水。
4、用途: 藥品等級的醋酸鈉可用于血液透析的制備和腹膜透析液及胰島素和輸液液體的生產。醋酸鈉作為聚合催化劑在制革、紡織印染、在攝影等產業有廣泛應用。醋酸鈉也可用于保存加工過的肉類，它常被用在與其他酸的組合防腐劑如乳酸和丙酸酯。
